Mom's Sautéed Baby Carrots with Green Beans

From time to time we'll be featuring recipes from the exact kitchen where the idea of Farm to Door Club was thoroughly discussed before being born. This week's recipe for Sautéed Baby Carrots with Green Beans is from the kitchen of Farm to Door Club's most loyal customer, our co-founder's mom! 

They’re veggies, they’re tasty, they’re healthy and they’re a perfect complement to fancier dishes you may recall preparing back when entertaining friends and family was commonplace. Added bonus? This recipe features local baby carrots and green beans from this week's produce box and makes for a nutrient-dense dish that will be on your plate in less than 15 minutes. Enjoy!


Ingredients: Sautéed Baby Carrots with Green Beans


  1. In a flat, wide non-stick pan, boil 1/4 cup of water at medium heat, add a pinch of salt.
  2. As the water starts to bubble, add the carrots and close the lid. Let it boil for 4 minutes.
  3. After the water has evaporated, add 1 tbsp of olive oil and let the carrots sauté. 
  4. Next, add the sliced onion & green beans to the pan, stirring occasionally for 3 minutes.
  5. Finally, turning down the heat slightly, add salt & pepper to taste and cook for 1 more minute.
  6. Remove from heat. 
  7. Plate and enjoy!
